Why are “touchless” sink controls and automatic soap dispensers so finicky and unreliable?

My wife is white, relatively pale, and has low blood pressure – that seems to stop an awful lot of things that should work, from infra red sensors to touchpads and screens in general, to fingerprint sensors.
I fucking hate that everything is going to touchless or touch controls. Cars, Appliances, etc… There is no feedback other than visual if your touch worked making it especially dangerous in cars. Give me the old fashioned push buttons or knobs. <end rant>
