Why are weather radars so laggy/inconsistent in their animation?

Is there a fundamental reason weather radars can’t have a nice animation that is just as accurate as the bad/laggy animations of say AccuWeather?

Weather radars are fairly slow, and take “slices” at different elevations each time they go around. Then they stack these together to get the “composite” radar images that you are used to seeing. The problem is that this is a fairly slow process that can take a couple minutes as the radar goes around a bunch of times, and a storm can move/grow quite a lot in a couple of minutes. Now, we can do some magic and interpolate between images to make it smoother but that doesn’t actually give us any additional information so it’s useless to people who actually want to monitor or investigate the storms.
