Why are whole tunas bought for so much when canned tuna is one of the cheapest foods you can get?

It depend on grade and the freshess of tuna
Tuna have grade, believe it or not, base on size, age, where they live, etc… And while something like beef, or wagyu, can be quality control to a certain extend, tuna is wild caught and can have very different price range.
The freshness of the tuna is also a factor, it’s very hard and complicated to keep tuna fresh, especially on a long voyage on the sea, and all that effot cost a lot more than throw it in salt
