Wood is naturally variable.
It’s possible — but a lot of work, which means a lot of expense — to pick appropriately matching wood pieces and lay them in nice symmetric patterns. You have to make it *perfect* though, because when it’s symmetric, every flaw stands out a lot.
It’s much easier and cheaper to lay the wood out semi-randomly, so that you can just use whatever you have naturally. There’s no such thing as “wrong” in that case.
Note that it’s still “fake random” — truly random would actually not look very good.
