They are much flatter than the plastic spoons we used to have. They are very hard to use, almost like eating rice with an ice cream stick. Why can’t they make them more curved?

Plastic spoons are molded, you take molten plastic and pour it into a mould of whatever shape you need (eg spoon).
Wooden spoons (for disposable cutlery, not cooking with) are cut from a flat thin board of wood and then bent into shape. Wood doesn’t bend very much so you can’t make the dip in the spoon very extreme before the spoon breaks.
If you wanted a disposable wooden spoon that was as curvy as a plastic one you would have to take a thicker piece of wood then carve out a spoon from it. This is much more expensive and wastes a lot of wood, kind of the opposite of the point of wood as a more renewable material.
