Why can’t a bullet proof vest protect you from a knife stab?

Bullet is a hammer, knife is a needle, kevlar and similar materials can bend a lot to take a blow (bullet/blow). They suck at being hard enough to stop high pressure penetration like a needle. Bullet is still going to hurt like a complete hammer blow, it just won’t continue to travel through you.

However with that said a knife attack on a standard vest if not going to cause a lot of harm. It may penetrate but not likely enough to cause significant harm. Just bloody cuts, not guts and gushes.

Not answering the question but as a bonus point, bullet “proof” vests can sometimes damage you nearly as much as just getting shot. This of course is depending on a lot of factors but basically think of it like this: you have a pistol and you shoot an anatomically correct ballistics dummy wearing a vest. The bullet is stopped by the vest and doesn’t pierce it; however, the force of that impact completely shattered your ribs and made them impale your lungs and other vital organs leaving you not much better off that if the bullet had just cleanly cut through you.
