Why can’t more birds speak like Cockatoos?

We don’t actually know, beyond some studies that have shown certain brain regions in songbirds and birds like parrots and cockatoos have a different structure than the ones that can’t mimic.

We do know certain smart birds can learn some basic language (and have their own language like crows) but cant mimic it.
