Why can’t sha256 be reversed easily?

Can’t the steps be reversed one by one to get back the original?

Data is intentionally thrown away at each step. To reverse the hash, you’d need some way to reconstruct that missing data. That’s the fundamental difference between hashing and encrypting: One throws away data, one rearranges it.
