Taller gearing and more gears can add top speed but also takes longer to accelerate.
There is a trade off of top speed vs acceleration with gearing.
Spinning a higher gear takes more engine effort. There is a finite amount of effort an engine can produce and it works best at certain RPMs.
Theoretically adding gears would work yes, but that’s added cost, complexity, and losses to friction for a gear that would accelerate at a snails pace from 75-85 isn’t likely seen as worth it.
