why can’t we put oil on shoes to walk on water?

The title is pretty much self explanatory but since they both oppose each other, why couldn’t we hypothetically do this?

If you hold a helium balloon, why don’t you fly? Because your weight counteracts the lift of the balloon. Same case with the oil.

We’re still more dense than water, so we would still sink. Now if we weren’t more dense than water, it may be possible to float on the water. Walking on it would be a tougher feat to accomplish

Oil and water don’t mix, but they don’t actively repel each other. The oil could potentially make the boots waterproof but it would do nothing to prevent you from sinking.
