Bunch of reasons.
We respond to movement. We notice a lot more movement when we have our eyes open, so it’s very hard to be at rest.
We need to blink, otherwise our eyeballs dry out. Since most muscles go limp during sleep, you can’t blink. Keeping them closed is the next best thing to blinking.
Light. Pretty self explanatory I think.
Also, side note, it’s possible. Just hard to learn and not useful in any way.
