Our sense of taste is extremely limited. Sweet, sour, salty, bitter, umami. That’s all. No further nuance. What we interpret as the “taste” of food is really mostly its smell. That’s where we can distinguish thousands of compounds. So, if you block your nose, you miss out on most of what our brain usually considers “taste”.
