why do bicycle pumps have something like “don’t use to pump your car” even though some bike tyre require more than double the pressure than that of a car tyre?

I think you’ve answered your own question, no? If a bike pump can output more pressure than a car tire can handle, by using a bike pump, you’re making it likely you’ll blow up your car tire.
If I remember right, a lot of bike pumps don’t have pressure gauges, you just stop when it “feels right”, but if you did that to a car, you could blow the tire.
