I’ve searched this sub for the answer but I only got answers that were close to this question (like exact smells) and not the actual way things are in general.
Some smells quickly get into the stuff in the room (like furniture, curtains, carpets etc.), so those things continue to spread the smell even if the original source is long gone.

If you have carpet, get a wet vacuum. it helps with smells, especially cooking ones like oils.

There are a variety of reasons why some odors are detectable longer than others. Usually it has to do with the detectable limits or part per million the odor is detectable at. Styrene for example is detectable in the air at a very low ppm.

Your nose is better at detecting some smells compared to others. This is usually tied to smells that indicate something is rotten or poisonous, since it would have been very important for our ancestors to notice that.
