Why do certain smells stay in a room or location a lot longer than others?

I’ve searched this sub for the answer but I only got answers that were close to this question (like exact smells) and not the actual way things are in general.

If you have carpet, get a wet vacuum. it helps with smells, especially cooking ones like oils.
