why do charley horses happen? Like, how and why would muscles unconsciously contract? And also, would local anesthesia stop a charley horse?

Lack of certain electrolytes usually. Mainly magnesium and/or potassium. Lack of those prevents your muscle fibers from relaxing properly and can cause painful cramping.
There are other causes, but that’s the common one.
