Why do computers force updates on you at certain points? Like “screw whatever you’re doing it’s update time!” Kind of thing.

Not everywhere. For example GNU/Linux systems do not update unless the user says so.
But outside of that it is because tech companies often “confuse” being user friendly by making everything work “automagically” and not letting the user to do anything technical and instead make it themselves.
