Why do computers force updates on you at certain points? Like “screw whatever you’re doing it’s update time!” Kind of thing.

That’s exclusively a Windows thing. Part of the reason is because Microsoft tests updates on user’s machines, so they can’t be bothered to wait around for you to manually update.
