The flavor profile of food/drink changes depending on oxygen content in your mouth. Drinking through a straw reduces the oxygen present, changing the flavor profile.

You can test this with other foods you eat/drink. It’s especially common during wine tastings to “slap” the tongue against the roof of the mouth in order to aerate the wine and taste it fully/properly.
