Why do farmers destroy their crops when weather conditions are bad? Why bother going through the trouble? Why not just let them grow and get at least some harvest?

I’m not a farmer, but I have a large garden and a respectable homestead. The weather really fucked with my garden this year. I decided I’d wait it out and just harvest what I could when it was ready. That was a mistake. I should have torched the whole thing and started over and I’d have had so much more success. Instead, I have barely 30 pounds of potatoes when I should have 700. I have a handful of beets when I should have 300. I got 3 ears of corn and I planted over 200. I got zero beans, a handful of peas, a few handfuls of chickpeas. Even my dill didn’t make it and it’s really hard not to grow dill.

Allowing the small amount to grow while the rest died was a waste of time, energy, and now I don’t have any stores for the winter.
