Why do fast cars lose control when accelerating in a straight line?

Seen many videos of fast cars (mustangs especially lol) accelerating in a straight line and then losing control and going into the curb/crowd. What would cause it to do that when the wheels are just pointed straight ahead?

How does one prevent or control this?

Imagine you’re walking in a straight line and one of your shoes slips on a banana. Your body will move in an unprovoked direction as you try to regain balance and stop slipping. This is what car tires do when they are moving really fast and one loses grip because it spins too fast, runs over something different than the other tire or your front tires steer it into a slip.
