Why do fast cars lose control when accelerating in a straight line?

Seen many videos of fast cars (mustangs especially lol) accelerating in a straight line and then losing control and going into the curb/crowd. What would cause it to do that when the wheels are just pointed straight ahead?

How does one prevent or control this?

What happens is something (driver turning the wheel, pothole, bump, so on) causes the wheels to no longer be pointed straight ahead.

And at high speeds, this is more of an issue because of how much momentum you have. It creates a smaller margin for error where that slight turn of the wheels can cause you to flip.
