I’m referring to the door that doesn’t have the water dispenser. I don’t see how having it open would affect the water flow.

I’m not sure if you mean the mechanics of it or why the mechanism is there, but there is a sensor in many fridges that prevents the water/ice dispenser from functioning if the door is open. I suspect that it’s like that because in a lot of models, it’s possible to accidentally nudge the dispenser when you’re opening the door if you’re clumsy enough.
Not all of them do actually. The one we have where I work will only turn off the ice despencer when either door is opened. You can get water through the door regardless.
Can’t speak on water, but it is a simplier mechanism to always cutoff the dispenser when a door is opened and can tie it into the same circuit that turns on the lights. This does reduce the overall costs. Some might just have that same sensor just disable the whole dispenser mechanism instead of just ice is likely what is the cause. Again, costs.
