There’s also some factor of genetic engineering and human domestication. In order to produce more edible crops, humans have domesticated wild fruits to have more edible characteristics. A byproduct sometimes changes the colors. Ripe bananas before human domestication where green and didn’t turn as bright yellow as they do now
