Why do green beans keep their jackets.

Peas are taken out pods but green beans aren’t. What is the reason for this?

Green beans are picked fresh and young, and most importantly before the beans have fully developed. That’s why there’s so much flesh to the jacket and the beans are small. If you were to leave them on the vine, at the end of summer you’d have much more bean (but it will be much harder, and drier), much less jacket.
