It’s generally thought to be related to the need to destroy pathogenic bacteria. Animals carry more animal diseases than plants do. Beavers, which are herbivores, have highly acidic stomachs and I have seen it speculated that this is to protect them from waterborn diseases which they are more likely to contract than most herbivores due to their habitat.
