why do icemakers in fridges use those pesky compression fittings?

Sinks and toilets do fine with normal lines that you can just twist on and off and not worry about leaks.

Every icemaker I’ve messed with has annoying plastic tubing and some kind of compression fitting that have to be perfectly aligned and tightened just right to not leak. Why?
