Because the carbs are already digested by yeast into alcohol which is not a carb. It can be digested some more into vinegar though, so you actually gain some caloric energy from it, even though there’s 0 carbs, fats and proteins.

They have. Ethanol, drinking alcohol, gets metabolized to acetate, which is basically vinegar.
Alcohol is actually quite rich in calories.
Calorie content of pure alcohol is in between sugars (more) and fat (less).

The carbs are broken down into sugar and then into alcohol by the yeast. So all you’re left with is a sweet alcoholic mess.
