Your brain maintains a level of a hormone called Leptin. As you eat, the leptin level raises and your hunger turns off. When you eat quickly, you are consuming faster than your brain can process the hormone so you over eat.
Some people’s brains have a hard time with Leptin production. Their levels are always low and that can cause them to legitimately feel hungry even when they have enough to eat. Its common in many obese people.
The sensation of being full doesn’t just depend on the stomach filling up physically. There are lots of signals that get sent to your brain. Besides the signals from nerves in the stomach that sense how physically full it is, there are a bunch of hormone signals that tell the brain what kind of stuff is coming in. These take a little longer. So, if you eat slowly, your brain will start to get the message “we’re good, we got the stuff we need” even if the stomach is not full.
