Skin loses collagen and blood profusion. Basically, collagen keeps your skin stretchy, and blood profusion means how much blood can reach certain parts of your body (in this case, the skin around your pores). With less collagen and a lower concentration of nutrients, your skin becomes less elastic (able to retain a taut shape despite stresses like gravity/weather/sun/etc.). As a result, your pores also stretch wider and become easier to see.
