Why do potatoes rise when boiling when you put a cover on them?

I suppose the pressure inside the pot rises slightly because the weight of the cover must be overcome for the steam to escape. This would increase the boiling point of the water a bit, but also increase the density of the water.

If the density is greater than that of the potato, the potato will float.
