why do small movements on most small reptiles and amphibians such as turning heads are quick and short? Making them look jittery when doing these movements in quick succession

Because some animals can only detect movement. So if you freeze you go undetected. If you move quick they have trouble registering you. Considering that lizards often hunt insects it’s an advantageous way of moving.
