Why do some name brand items taste differently than off-brand items, yet they have the same ingredients?

This thread has brought up a big pet peeve of mine. Recipes never say what brands to buy. For example, chili powder tastes drastically different from brand to brand. This is just one example out of dozens I could give. Even some fresh ingredients differ quite a bit on taste. What kind of onion, or potatoes are you using?
