Why do some phone charging cables are lower quality than others?

What I don’t understand is what material makes them charge slower than others

Most of the time is is simply thinner electrical conductors. A thinner wire has higher resistance so the voltage will drop over it at higher current.

The resistance is also proportional to the cable length so a cable diameter that work fine on a short cable might not work for a long calble.

A thinner wire is cheaper because less copper is needed.
