Transplanting is a shock to the system. Some plants are heartier than others and can bounce back easily from the shock. Others have a harder time.

The primary reason is that transplanting can damage roots. The roots can be sensitive, and if the soil is jostled in the process of digging the plant out of the soil the small hair-like bits that do much of the absorption can be broken off, which makes the roots much less effective at absorbing water and other nutrients. Plants may also be transplanted from an optimal location to a suboptimal location, such as from partial hade to full sun or a moist location to a dry location.
