why do things cool exponentially and not lineral

Why is it that something will heat extremely fast when exposed to something hotter but then slow down still getting hotter just a lot slower and the same for something getting colder

Let’s say you haven’t had water all day and suddenly someone gives you a gallon of water. You drink it fast at first, because you are super thirsty, but eventually you’re not thirsty anymore and stop.

Cold areas are simply thirsty for heat.
