Lightning is just a bunch of charged particles ramming into each other and creating an excited path for electrical discharge to a ground. Volcanic eruptions release a heck of a lot of charged particles that ram into each other, which can sometimes create an excited pathway to a ground.

There’s a lot of dust and rock particles moving against each other in the plume above the volcano. This can create a static electrical charge, which in extreme cases can cause lightning.
