Gravity is pulling us down all the time, when we walk on a flat level, thats what we are used to and we are working in parallel to gravity, there is no slope for us to alter the direction gravity would have us roll is we were a ball.
When on a hill, gravity rolls a ball down the hill, its pulling us the down the slope to the direction of the lowest direct point available, so it takes less effort to move with the gravity wanting us to move in that direction.
When we walk up a hill, we are working against gravity pulling on all our weight, which wants us to roll down the hill to the lowest point directly available.
