why do we get so itchy when we don’t shower?

Depends on a few factors like heat, humidity, dry skin, water ph, sweat propensity, age, etc.
Not all people everywhere do for the same reasons. Otherwise many, many conventions would be a much more pleasant experience.
You are probably experiencing some good ol’ dry skin itchiness. Does your skin look ashy when dry? You might want to try some lotion after you towel off from the shower. But also maybe shower more often..
