Why do we need water?

Basically chemical reactions occur in cells and water is a good medium for those to happen in. It is also used for bodily fluids and thus the trasport of substabces i think.

Water is good because it requires a lot of energy to raise its temperature, its ph is neutral, things can dissolve in it and its stable.
