Why do we often put our finger or hand on our chin when thinking?

It might be in relation with the famous sculpture from Auguste Rodin : The Poet, which after was called « the thinker » by everyone. It pictures a man meditating with his hand on his chin, and is the representation most people have in mind when they imagine someone thinking. So that might be by imitation.

Where did Rodin get his inspiration from, this I don’t know.

But actually, this behaviour is what we do when we FAKE thinking. It is not a natural reaction.
