Why do we say the universe is infinite in terms of size, while the light from the edge of the universe might have not reached us yet?

The observable universe and the universe describe two different ideas and im not sure what you mean.

The observable universe is not infinite its all the space thah we can ever see as its how far light has gotten since the big bang.

The whole universe might be infinite or not, we dont know, it might curve back at some point, we cans see it.

But if its not infinite its still many times bigger than the observable part we can see because we can not measure any curvature, so if its curved its a slight curvature.
