Feed and biofuel. Something like 40% of America’s food crops are used to feed livestock. They could feed twice their population with those crops.

Corn and soybeans are just very useful crops with a massive market for them. Corn is basically in everything in some form and soy can be added to basically anything without significant impact to taste. If you are going to grow a crop corn and soybeans are a very low risk investment. You can grow them by the mile and when you harvest them you are basically guaranteed to sell the whole harvest in some form. Add in the fact that the U.S government subsidizes both of these crops and its just a very good idea to grow them.
