Why does asparagus grow so fast, and how come kther foods don’t grow at the same rate?

Asparagus takes a few years to establish – you need to let it grow and develop a root system for two to four years before you can regularly harvest it.

Once established it has an extensive root system so has good access to nutrients, and the ferns that you don’t harvest power the shoots coming up that you do. As you’re harvesting shoots there’s no need to wait for them to mature (once the plant is productive) so you keep getting a fairly rapid harvest.

Not many plants have this – many crops are annuals – they start over from seed each year, or are fruit bearing trees that take some time to bear fruit once the growing season starts.
