When you cut an onion, the onion releases a gas which combines with the water in your eyes to form a mild acid. This acid is the burning feeling you get.

A compound within the onion is released as soon as it is damaged as a defense mechanism. This compound irritates the eyes and respiratory systems of animals, and dissuades them from continuing to eat it. Aside from humans, of course.

The compound that is produced when an onion is cut is called syn-propanethial-S-oxide..Its attracted to moisture so you can cut your onions near running water, whistling is said to work but the most efficient way I’ve found is to just put them in the fridge or freezer 10-15 min. prior to cutting..Heard cutting them near a flame helps as well..
