In our evolutionary past fat was rather difficult to come by. However, it is needed by the body or you’ll die. So those who found fat to be really, really tasty would pig out on the stuff whenever they got the chance. This was then stored so that when they didn’t come across it they could live off their own fat reserves.

Those who found fat to taste disgusting or not as good wouldn’t eat as much and then would possibly die during leaner times and thus not pass on their genes. This meant that those who loved the taste of fat passed on their genes more often and so we, their descendants, just love fat.

Fat is an extremely dense supply of calories. We evolved to find calorie sources like fats and sugars delicious because resources were scarce for 99.9% of our evolutionary history, meaning plenty of our ancestors died from starvation while virtually nobody ever had enough food to become obese. The surplus of calories we enjoy in today’s modern world is a very new development, and evolution works far too slowly for us to have lost our calorie-craving instincts.
