I always assumed it’s because in an open cup your nose can smell the drink as opposed to a can

Cans and plastic bottles both have a layer of plastic that subtly affects the taste.  This is why better soda, and beer comes in a glass bottle. Because glass is inert.

Glass pipes tastes better if you smoke.

Glass cup tastes better than a plastic cup

How do you set up the experiment to test this? Pour the liquid from the can to a glass?

Or do you mean fountain drinks, which are made by mixing soda syrup with carbonated water?
