Look closely enough at any surface and you will see imperfections. When two imperfect surfaces come into contact, they bump, vibrate and push up against eachother. All these interactions are what cause friction.
So, everything is actually kinda bumpy. Even the smoothest things you can think of are kinda bumpy. So when these bumpy surfaces rub together, the bumps get caught on each other, and make it harder to slide because they keep getting stuck on each other.
Friction is a loss/conversion of energy. When two materials meet one is (permanently) deformed or destroyed, this process takes energy away from whatever movement was happening before.
Because atoms and molecules repel other atoms and molecules.
