Because most fried foods are now cooked in highly processed, hydrogenated oils such as:

Vegetable oil
Canola oil
Cottonseed oil
Safflower oil
Sunflower oil

Foods fried in tallow, lard, butter, olive oil (at lower temps) are much better for you.
