Blood is made up of proteins, when heated proteins go from being tangled up like a pair of wired earbuds in your pocket, to stretching out and looking more like a straightened out paperclip.

When this happens the proteins become lodged deep into the fibres of the fabric and not come out. There are ways to reverse this process but not without also damaging your fabric.

Cold water keeps the proteins tangled and they are able to wash out. This is also why it’s best to rinse wounds with cool water

the cool water both constricts blood vessels and allows the non clotting part of your blood to wash away
